The True History (Probably)

Every pizza shop has an origin story. Most of them are lies designed to sell you a slice. This one, we're fairly confident, is not.

History, part 1

They don't want you to know why the pizza is round. We do.

Everyone knows the pizza is round because a chef somewhere spun some dough one day. That's the story they want you comfortable with. We looked closer. We found a different answer, and it involves a flat disc, a very committed founding committee, and a lot of late-night arguing about crust geometry.

History, part 2

Every founding story has a version they'll tell you, and a version that's actually true. This is the true one. Probably.

The official version says a small group of friends pooled some money, rented a storefront, and started selling slices. That part's true, technically. What the official version leaves out is why. Ask any of them and you'll get a different answer -- a dream, an argument, a dare, a map someone found and couldn't stop thinking about. We've stopped trying to reconcile the stories. We've started serving the pizza instead.

History, part 3

We didn't set out to open a pizza shop. The pizza shop found us. Wake up.

We didn't set out to run a restaurant. We set out to ask questions nobody else was asking, and somewhere along the way, a pizza shop happened to us. If that sounds backwards, you haven't been paying attention. Most good things happen backwards. Most true things do too.

History, supporting record

We're not the only ones who noticed the official story doesn't quite add up. Consider the record:

Make of it what you will. We've made pizza. Come see for yourself -- the crust doesn't lie, even when everything else might.

There's more where that came from.
